HOW TO ENTER THE 2018 EGGLAND’S BEST “AMERICA’S BEST RECIPE” CONTEST

Eggland’s Best (EB) is once again searching for the most passionate egg fan with the best and most creative original egg recipe!  The EB 2018 “America’s Best Recipe” Contest invites fans from across the country to show off their hometown pride and submit recipes inspired by their favorite local/state ingredients or dishes.  All recipes must include at least two whole Eggland’s Best eggs and should be submitted by April 30, 2018 for a chance to win $10,000! Fans can enter up to two recipes within each category, which means eight chances to win!

  • Grand Prize winner will receive $10,000 and a year supply of Eggland’s Best eggs
  • (4) Best in Region winners will receive $1,000 and a year supply of Eggland’s Best eggs
  • (43) Best in State winners will receive a 3-month supply of Eggland’s Best eggs

All eligible entries will be judged upon specific criteria by a panel of judges, including Registered Dietitian and Nutritionist Dawn Jackson Blatner (from the hit ABC television show My Diet Is Better Than Yours).  Please read the rules before entering to be aware of what the judges will be looking for in each tier (there is 3), such as inspiration, creativity, and passion for the superior taste and nutrition of Eggland’s Best Eggs.

NY Bagels!

State pride!  Each state has a signature food they are proud of.   For instance, Arizona is known for having some of the tastiest Mexican food.  Alaskans take immense pride on being the home to the utmost delicious salmon.  For us New Yorkers, we have our Bagels.  That’s right, NY offers the best in chewy, mouthwatering, satisfying, baked to protection bagels!  Of course, other states have bagels too, but none of them compare to a New York bagel.  Why?  Some will argue it’s because of the water or the cold and slow fermentation process.  Others say it is how the bagel is boiled before baking.  I’m not exactly sure why, but nothing compares to a good New York bagel.

NY Avocado Egg Salad Everything Bagel Sandwich Recipe

Thinking about how Easter is only a month away, I wanted to share a favorite recipe that would be great for using up those leftover hard-boiled eggs.  And don’t forget to use Eggland’s Best eggs this Easter for the freshness, nutrition, and taste!  So, as a way of showing off some of my hometown pride of bagels and love for Eggland’s Best eggs I decided upon the recipe for NY Avocado Egg Salad Everything Bagel Sandwich.

If you have never had avocado in egg salad before, you are seriously missing out on the creamiest, most velvety textured, egg salad you can dream up.  Basically, you could omit the mayo completely and it still would be incredibly moist and delicious from the silkiness of the avocado.  Combined with the multiple toppings of poppy seeds, sesame seeds, onion flakes, caraway seeds, pepper, and salt on the Everything Bagel, this is the showstopper of all egg salad sandwiches!  Just ask my 10-year-old who downed the sandwich without any complaints and gave it a thumbs up!

The avocado egg salad is simple to make, especially if you decide to use Eggland’s Best Hard-Cooked Peeled Eggs.  The first step is in a small bowl combine the mayo, Greek yogurt, spicy brown mustard, chopped fresh dill, freshly ground pepper, and sea salt until it becomes a creamy dressing. Set it aside for a minute.

Next chop the Eggland’s Best Hard-Cooked Peeled Eggs and place in a large bowl.  Cut the ripe avocado in half and remove the seed.  For ripe avocados, the outer skin should be easy to remove.  Once it is fully peeled, dice the avocado and add to the eggs.  Add the minced onion.

Gently stir in the mayo dressing to the egg mixture until all the ingredients are well combined.  Scoop on the toasted Everything Bagel bottoms and cover with the remaining tops. Enjoy!

    Eggland is a great brand. I like to use eggs a lot, especially since my diet is predominately keto.

    We always have several dozen eggs in the fridge. Usually, a dozen are hard boiled for quick snacks or meals.
